You have to copy the PNGs over the default gnome ones, for example copy soffice_calc.png to
/usr/share/icons/hicolor/48x48/apps/ooo-calc.png

(Path for standard icons in ubuntu hardy, gnome as desktop. Other distros/desktops may have a different path. I don't know.)

They¡re nice, but would look better in a icon theme.

I'm using Crashbit IconTheme "Beta 1" (not released yet) and look great. If you wish I can contact the Crashbit author and recommend your icons.
